Apple, Cranberry, Cherry, and Pomegranate Salad A Palatable Combination!

There’s no better time to start spicing up some greens then after a long holiday indulgence. Author and activist Colleen Patrick-Goudreau makes eating clean a delectable dream. This Apple, Cranberry, Cherry, and Pomegranate Salad is proof for your palate that optimal living doesn’t mean bland eating.
Ingredients:
4 red-skinned apples, chopped (not peeled)
¼ cup blanched slivered almonds, toasted
¼ cup chopped dried cherries, or ½ cup pitted and halved fresh cherries
¼ cup dried cranberries
¼ cup chopped dates
1 cup nondairy vanilla yogurt
1 tbsp lemon juice (optional)
¼ cup pomegranate seeds
Instructions:
In a medium-sized bowl, stir the apples, almonds, cherries, cranberries, dates, yogurt, and lemon juice until all the ingredients are combined.
Divide the salad among 4 plates and sprinkle each with pomegranate seeds. The salad holds up well overnight for healthy leftovers the next morning!
Cranberries:Your mother didn’t lie: a cup a day helps keep the urologist away. Although the exact amount isn’t determined, research has shown that drinking this tart juice daily reduces the risk for urinary tract infection among women by at least 20 percent.
Cherries: As well as being high in fibre and low in calories, cherries rate low on the glycemic index (the lower the rating the better). Thus unlike fruits that are high on the GI, these tart treats have minimal impact on blood sugar levels, making them a healthier choice.
Pomegranate: Sometimes referred to as “the jewel of the winter,” pomegranates are packed full of vitamin C.A compound called punicalagin is found exclusively in this fruit and shown to benefit the heart and blood vessels.
